Bouchon Pais Salvaje White

The País grape is Chile's ancestral varietal, gone wild in the forests of Chile's southern coastal mountain range. Farmers have to climb ladders to gather the grapes - making a light, crisp wine, using clay amphorae and natural yeasts. It is unfiltered, basically 100% natural. The País grapes are normally red but in the woods in Bouchon's winery some have mutated into white, from where this wine is made, creating a totally unique product. ('Salvaje' means wild.)
