Hacienda Araucano is committed to environmentally sustainable wine making; it is certified organic and biodynamic. The wine making focuses on natural processes and in this case, the grapes are fermented in open barrels for regular treading during fermentation. After that, the barrels are closed and the wine is left to macerate for a further 8 months.  Finally, the wine is separated from its skins and left for one month in clay amphora. The result is a nuanced wine with fruity notes of quince, pear and orange zest with a floral nose. It is a complex, textural delight and a brilliant accompaniment for oily fish and lighter red meats.
